Vinification: Traditional in concrete tanks with two overs per day during fermentation. The temperature is controlled by cooling flags in stainless steel with a maximum of 31 ° C. Fermentation lasts about 18 days.
Breeding: The wine, after several withdrawals during the winter, is set partly in oak (wood types Vosges) new or a year and the rest in tanks. After a year of breeding, it is assembled. After a light filtration, the wine is bottled.
